Write /water or /lava (select the area first) or press F4 to open a material menu.
You should look for a mapping guide rather than creating a new topic for each question.

This engine is based on the cube 2 engine so http://sauerbraten.org/README.html#documentation could be usefull. Some things were changed though.

http://tesseract.gg/forum/viewtopic.php?id=129 tells you (the Materials section is after the screenshots).

But you just select something then type /water, /lava or /air to remove all materials.
